Jalapeno Soup 1-32 ounce box chicken broth 2 cans diced tomatoes Small bag baby carrots diced 1 large onion diced 4 ribs celery diced 1/2 head of cabbage chopped 5 potatoes diced 1 large jalapeno seeded and diced 2 large cloves garlic minced 2 tsps cumin 2 tsps oregano 1/2 tsp chili powder 1- 1/2 tsp salt Pepper 8 ounce package cream cheese Mix all ingredients, except cream cheese together in large pot. I cooked mine in a extra large crock pot. Cook over low heat for several hours until veggies are done. Half hour before serving stir in cream cheese and mix well. I like my soup with lots of broth so I did add more chicken broth to mine. You can control your spice with more or less chili powder and more or less Jalapeno Peppers. This is a soup that will keep several days and flavor improves as well. Enjoy!
