Just got this message from a farmer who properly raises pork and beef, for those looking for some by the cut instead of bulk. He is now selling mostly to Sutter Meats in Northampton, and whole and half animals, and has some great leftovers in his freezer. If a few of you make an order, he will meat you locally, maybe Feeding Hills or W Spfd or Springfield, ask him. This is the message I got this morning, after asking how big the packages of pork fat are that he is taking make me an offer for (for melting into lard, a very easy process, and a very healthy fat for cooking with if from properly raised pigs....better than olive oil and loaded with vitamin D, just in time for winter!) these are in about 5lb packages.. I have some pork bones and a few cuts of beef left.. also some ham and other pork cuts.. Pork bones make fantastic broth, especially if meaty and roasted first. Easy-peasy. My favorite broth. His ham is processed commercially so may have nitrates, ask first. There are USDA rules. Contact him directly on his cell. His phone has no signal on part of his farm, so leave a message and he will call you back. Call again if you get no reply in a couple of days, fall is busy on the farm and he may forget.
