Keto/ Diabetic Brownies with Frosting 350 degree oven Have 4 eggs ready at room temp Mix together 1 cup almond flour (get the lumps out!) 1 cup ground flax seed flour 1 cup Natural Mate sweetener (maybe an extra tablespoon…I would taste test, they WILL come out sweeter tho!) ½ cup organic cacao 1 Tablespoon aluminum free baking powder (not soda) ½ tsp salt In a pan, slowly melt 4 oz of Unsweetened chocolate ( I use Ghirardelli. One pkg is 4 oz.) chopped melts faster 4 ozs Butter Bring this just to melt no further! Have ½ cup of heavy (whipping) cream waiting and ½ cup water. Flax absorbs a lot of water in the same manner as coconut flour does. You may not need all of the water depending on the size of your eggs. Pour the hot melted chocolate and butter into your dry ingredients. It will be very thick….add cream and then a little water, just a couple of tablespoons from the half cup. This cools your mix down to accept the eggs. ½ to 1 T vanilla extract…..I’m heavy on vanilla Beat in the eggs one at a time. You can add more of the water if it’s just not stirring well. Nuts are optional! It should be very thick. If it’s pour-able, that’s ok, it will need to cook longer. I use a 13x9 glass dish that I have sprayed well with coconut oil spray. Pour or spoon (more likely) batter in and smooth it around a bit. I bake for 30 mins but that’s MY oven. I TEST with a toothpick a LOT!! You want a little cling on your toothpick! Not coated but a little cling so that the brownies will be moist! If you cook them dry you wont be happy. I’m changing my name to….. TEST TEST TEST!!! LOL!!! While the brownies are cooling….. Frosting In a pan (I use same pan as above, no need to wash :P) 2 heaping Tablespoons Natural Mate sweetener 2 oz Ghirardelli UN-sweetened chocolate (chopped melts faster) 1 tsp organic cacao ½ cup (4 oz) Butter 1/3 cup heavy (whipping) cream 1-2 tsp vanilla Melt very slowly and stir, stir, stir….as soon as it’s just melted, remove from burner and stir. I stir and let it sit and stir until it’s still warm but not hot. It will still be a bit thin when you pour it over your brownies but then it sets up a bit and is just heavenly!!!
