Last night I posted something in the rants and raves section of Shreveports craigslist asking people what they look for in a bakery. I had one person respond bringing up gluten and allergen free baked goods, as well as baked goods that dont have over processed sugars in them that are better for those with diabetes. I responded to him via email to let him know I think its a great idea. Here is the response I got back: Thanks Shea, my papa a few years ago was suggested by the Nutritionist at WK he might be gluten-intolerant, and should get off all wheat etc. We asked her where we could buy him bread and things of that nature. She said she doesnt know, it doesnt exist her in Sport/Bossier. Nothing like telling you the key to making your loved one live longer aint in your grasp. But if you did.... Hope you do well girl. This brought a tear to my eye knowing that a complete stranger can be so supportive and appreciate something so simple as making a safer food for people with restricted diets.
