Last night was one of those nights that required comfort food. I bought Gardein Fish fillets (really good) and I wanted mac n cheese with it. I was tired and lazy so I just winged a basic recipe from memory and it turned out creamy and delicious. I dont measure when I cook. So these are all done in sprinkles, dashes and guestimates. Saute a half of an onion and a shredded carrot until soft (I added a little water and let them simmer a little bit at the end) Put them in the blender and add almond milk (guestimate approx how much sauce you will want).Blend until smooth. Make a roux with Earth Balance and corn starch. Season with garlic powder, salt, pepper, cayenne pepper, nutritional yeast, turmeric, dry mustard, and a squeeze of lemon. Add your onion/carrot/almond milk mixture to the roux and stir until creamy. You may need to adjust the texture w more almond milk if it needs to be thinner. Add to already cooked pasta.
