Layered Apple Tart Ingredients 1 sheet frozen puff pastry, thawed 2 dessert apples peeled, cored and sliced thin 60g apricot jam 50g brown sugar 1 egg, beaten 1 tbsp. caster sugar Method Pre heat oven to 180C/350F/gas 4 1. Roll pastry onto a well-floured surface into a rectangle. 2. Score around the pastry ½ inch in from the edge all the way around to create a border. 3. Prick inside the border with a fork, to avoid rising, and coat within the border with the apricot jam. 4. Fan the apple slices over the jam and arrange nicely in rows and sprinkle with the brown sugar. 5. Mix together the beaten egg with the caster sugar and brush all over the border to give it a nice golden finish 6. Put the tart on an ungreased baking sheet. 7. Cook for 10-12 minutes, until the apple slices are crisp-tender and the pastry is golden brown. Serve with whipped cream, or ice cream. Tips: Try adding ½ a teaspoon of cinnamon or some sultanas and sprinkle all over the apples prior to cooking. Gently heating the apricot jam will make it easier to spread on pastry.
