We know that your beef was born, raised, and cared for on our family ranch, not passed around between feedlots and cattle brokers. We only butcher healthy animals; no sick animals are allowed to enter the food chain. Our Beef is sold by the hanging weight. (Hanging weight is the weight of the meat before it has been trimmed of fat and bone before packaging, average cutting loss is 20 to 30%) The Average hanging weight of a whole animal is 525 to 830 lbs.
