Look at the time! Its Cheese-of-the-Week OClock! FEATURED CHEESE OF THE WEEK Salva Cremosco • Piedmont, Italy Talk to our cheese buyer, John, long enough and he’ll eventually tell you that his favoriteist cheese ever in the whole wide world is Gorwydd Caerphilly. This is inevitably followed by an obscenity-laden lamentation about how Pittsburgh, even now, is in a dead zone for the distribution of Neal’s Yard Dairy cheeses. Until that sad day passes, we can be thankful we have Salva Cremosco, a raw cow’s milk cheese from the Italian Piedmont that reminds us in some ways of a great farmhouse Caerphilly. It comes in a hefty, charcoal-colored brick blotched with grey-green and yellow molds — edible, by the way, though they may contribute some bitter flavors on the rind. Inside, you’ll find one of the palest pastes you’ll ever see in a cow’s milk cheese, the result of high altitude pasturage. You get a beautiful cream line just beneath the rind, but the texture quickly turns firm and crumbly toward the center. Flavors are tart and earthy, with some undertones of mushrooms and herbs. It ain’t Gorwydd Caerphilly, but what it is is pretty darn satisfying nonetheless. We like Salva with a glass of Saint Cosme 2012 Cotes du Rhône (100% Syrah) or Tenuta La Pergola’s 2012 Monferrato Rosso, a Piedmont field blend comprised mostly of Barbera and Dolcetto. Beer lovers would do well with Simon Girty, a strong dark Belgian ale from Millvale’s Draai Laag Brewing. How did you like our cheese of the week? Let us know what you think in the comments below!
