Looking for some input.Got some Bets Maltz smoked malt.Was looking for some idea of what percentage to use to add some smoke as a background note---not to overwhelm the senses.IE most smoked beers I have tasted ,taste like someone dumped liquid smoke in a pint. Supposedly the Best Malt is supposed to add a ham like taste,So on a 11 gal batch I was gonna use two row.Pound of caravienne and a 1/2 pound 120 to bounce if off of.Something like a scottish with a hint of smoke.After 19 years of home brewing I am breaking down and brewing my first smoke beer so any input would be appreciated.
