Low GI Recipe! Moroccan tomato and chickpea salad – serves 4 No Cook recipe! Ingredients • 1 red onion finely sliced • 2 x 400g cans of chickpeas drained and rinsed • 4 tomatoes, chopped4 tablespoons of lemon juice • 1 tbsp olive oil • A handful of herbs (ie mint, parsley), chopped • Pinch of paprika and ground cumin • Salt and pepper to taste Method 1. Simply mix all of the ingredients together in a large non-metallic bowl. Leave for ten minutes before serving to allow the flavours to infuse. Per Serving 200 calories, protein 12g, carbohydrate 30g, fat 5 g
