MMMM, Strawberries and whipped Coconut cream. Yummy. Coconut cream whips well if you use a good quality cream with plenty of firmness to it. Open a can and place in a bowl or jug and leave it in the refrigerator overnight. pour off the liquid and whip the solid cream part. It may not whip to firm peaks, but usually thickens quite well. A good replacement for dairy cream in recipes and with desserts. Give it a try. Much more healthy for you also.
