MRS. HEGIS REFRIGERATOR ROLLS (My All Time Favorite) 6 c. flour 1/2 c. shortening 2 c. hot water 1/2 c. sugar 2 t. salt 1 egg 2 pkg. active dry yeast Mix 4 cups flour, sugar, shortening, salt and yeast in large mixing bowl. Add hot water and beat for 3 minutes. Add egg and beat well. Stir in remaining 2 c. flour to make a very soft dough. More flour may be added later. Let dough rest in a warm place for 30 minutes. Punch down and knead well. Then make rolls and let rise in pan at least 30 minutes or to double size. Bake at 400 degrees 15-20 minutes or until brown. Rolls may be brushed with melted butter and sprinkled with sesame or poppy seed prior to baking. [Notes: This is a very versatile recipe. Once the dough has been kneaded, it may be refrigerated in a tightly covered bowl for several days, and dough may be pinched off as needed. As to roll-making method, I like to place 3 1 balls in each partition of a muffin tin to make cloverleafs. Or dough may be rolled out and cut with a biscuit cutter, then fold each round in half after rolling in melted butter or shortening. This recipe also makes great cinnamon rolls. Roll the dough into a large rectangle. Brush the rectangle with melted butter, sugar cinnamon, raisins, pecans or whatever else you like. Roll dough from the long side, and cut crosswise to make rolls. Cheese rolls can be made likewise by replacing the sugar/cinnamon with grated sharp cheese and finely chopped onion.]
