Made my cranberry sauce and brown bread for tomorrow. Bread is so easy and good spread with cream cheese and cranberry sauce. Sometimes I make cinnamon butter or orange honey butter.(same bread I use for cucumber sandwiches in the summer). Recipe(5 ingredients, easy, no oil, no eggs) 2 Cups whole wheat flour 1/2 C. + 3 Tablespoons of all purpose flour 1 Cup packed brown sugar, light or dark, dr. gives a darker bread. 2 teaspoons baking soda 2 Cups buttermilk Put dry ingredients in mixer and blend to break up brown sugar, slowly add buttermilk, mix just until blended. Bake at 350 approx. 1 hr. depending on size of pans, makes one lg. loaf pan, but I use two smaller ones. Wondering if anyone who bakes knows this trick. Turn the loaf pans upside down. Use piece of no stick foil lg. enough to cover the outside of pan plus a little extra on sides. Put no stick side against the pan, shape foil to pan, folding ends like you are wrapping a package. Now lift it off pan, turn pan over and put your shaped liner into the pan. Flatten the extra foil down the outside of pan, dont tear it off. You may need to adjust it a little, fitting foil into corners. No need to grease foil or pan...after baking and cooling bread, just wrap in foil, thats what the extra was for...no pans to wash..Just made 5 loaves, some to freeze. I have made this bread every year for Thanksgiving for about 30 yrs.
