Making Cheesy Chicken for my daughter Brittany tonight. This recipe and others are under the file tab at my Dinner at Ricks Facebook page. I am making a smaller version of the recipe below. Cheesy Chicken 2-3 chicken breasts ( I like to use the bonelsss skinles type) 8 ounces of shredded cheddar cheese salt and pepper to taste 3 cans of cresent rolls seperated 1-2 cans of cream of chicken soup Boil chicken until done reserving the broth for the soup. Let the chicken cool and shread or dice the chicken into small pieces and mix with 2/3 of the cheese. Spoon the cheese and chicken mixture onto each cresent roll and roll tightly placing in a sprayed baking dish. It is ok to let the sides touch. Make the soup using the chicken broth instead of water or milk. Pour 2/3 of the soup over the rolls and bake at 350 degrees for about 30 minutes or the tops of the rolls start to brown. Top with the remaining cheese just enough time to allow it to melt. To serve spoon 2-3 rolls onto a plate and top with some of the remaining soup as a gravy. This recipe is easy to make smaller or larger depending on your needs.
