Marinated Carrot Salad 1 lb carrots peeled 1 small green pepper 1 small onion Dressing: ½ cup sugar ½ cup salad oil ¼ cup ketchup ¼ cup vinegar 1 Tbs fresh lemon juice ½ tsp salt ¼ tsp black pepper Cut carrots into slices about ¼ inch thick – into pan with boiling water to cover and cook for 10 mins. Meanwhile, chop the green pepper and cut onion into rings. Prepare the dressing by placing the ingredients in the order listed into blender container or food processor. Process until dressing is pale in color and thick in consistency. In a bowl combine cooked, well-drained carrots with green pepper and onion. Pour dressing over and fold together to coat all ingredients well. Cover and refrigerate 4 to 24 hours to blend flavors
