Mary Margaret and her first thoughts and meals on a Food Bank Diet as #6PeopleHungry She writes: When I walked into Community Care on Thursday, I was a little overwhelmed. The first thing I noticed was a row of shelves with cans on them. I tend to avoid these aisles in the grocery store as most canned goods have gluten in them. I started to think that I was in over my head. When I got home from Community Care, I was a little worried. I had been given 6 peppers and realized that I could not possibly eat all of them before they went bad. This got me thinking. I throw out a lot of food, vegetables, left-over’s and I started realizing how much money I am throwing away. I need to plan better. If I were in this situation I would not be able to afford to throw out anything. I went to work on my budget. I have a cost of living budget worksheet that we use at Meridian Credit Union. My budget was really tight. I had $50 - $60 for groceries. I knew I had to be careful shopping. The bio I had been sent stated that this single mother did not have a car. She would have to bus it. She would shop where it was most convenient, and have to carry the groceries home by bus. That would also mean she could only buy what she could carry. Something most of us take for granted. I had picked up a can of Spam as it was on sale and I decided to get a little creative with it, and decided to fry it up for lunch. Montreal Steak Spice made it tasty. I was lucky as the Superstore had gluten free bread on sale so I bought a loaf. That was my lunch. For dinner I decided to cook with rice noodles, the peppers and can of tomato sauce I got from the Food Room. On my grocery list I had ground beef but as I was shopping ground pork was the cheaper option. I picked up mushrooms to add to my recipe. I cooked up a large batch and plan on reheating it for dinner Wednesday night. I might even take some of it to work for lunch this week. As I was going to bed I realized that I was feeling a little hungry. I had decided that I would take the bus in the morning. I have never taken the bus to work. I live 4 km from work and I drive every day. However, the person in the bio, did not have a car and relied on public transportation. I didnt even know how much the bus was until I looked it up. I made sure before going to bed, that my lunch was packed and my coffee ready to brew for the morning. I had made it through the first day. #HungerWeek #betheone #thankyou #donate
