Mini Omelets Ingredients 12 eggs, beaten 2 Roma tomatoes, diced 1 red or green bell pepper, diced 2 stalks of green onions, diced 1 large handful of fresh spinach 1 cup mushrooms, finely chopped (optional) 1 jalapeno, finely chopped (optional... as usual, keep seeds to add more spice) 1 tsp Cajun seasoning 1 cup shredded cheese, reduced or low-fat 12 thick deli-sliced natural ham slices (no preservatives, dyes, or additives) Instructions Preheat oven to 350. Mix all ingredients, except the ham slices, into large bowl. Spray muffin tins with olive oil cooking spray. Line each muffin cup with one slice of ham. Scoop 1/4 cup of mixture into each muffin cup. Bake for 30 minutes at 350. Remove and serve! Tip: These can be put in an airtight container or bag and refrigerated for up to a week. I usually make 2 dozen for my husband to take to work on Monday morning. He warms 3 or 4 up for breakfast, and they last all week providing him a great protein and vegetable packed breakfast!
