Moving sucks. Its not the getting to a new place, thats awesome, its the transition. The refrigerators are at the new place and the freezer. No matter what I need to do anything, including cooking, everything is somewhere else. If Im at the farm it is at the old house and vice versa. I have a cooler in the kitchen and I have to change out the ice every 2 days Even then it doesnt keep things cold enough to really preserve them. I realize Im not eating properly. So last night I made Chili Soup and corn bread. No butter, no lard so I used coconut oil to grease the pan for the corn bread which tasted delicately of coconut at the end. So hungry ate it like 40 going North. I love soups. I can put tons of veggies in them and using a tomato base I feel like Ive done my body a favor. Ill put them ii glass jars and send part with Dwight to eat at the farm. Heres the recipe: Chili Soup 1 onion chopped 1 lb ground beef Brown the onion & beef and drain off excess fat 1 can of diced tomatoes 1 can of tomato sauce 2 cans of water Just dump them in add Shake of Worchestershire Sauce salt garlic pinch of thyme big pinch of oregano a heaping tablespoon of chili powder cut up several stalks of celery dump it in cut slice of carrots slices of fresh or frozen okra (so good for you) snap some green beans 2 small zucchinis & 2 small yellow squash 1 or 2 ears of fresh corn, cut off the cob 1/2-3/4 cup of mixed frozen veggies (frozen peas & lima beans so yummy) (at this point you can decide if you have enough tomato and water to cook your stuff or not. If not add more diced tomatoes and more water to allow the veggies to cook) At the end cut up and dice one large potato Turn the heat down if you need to replace any water replace the water and let the mixture cook low and slow so the potato doesnt sink down and stick on the bottom. Throw your corn bread in the oven while the potato softens and it should both be done at the same time. I like to dish out the soup and let it sit a minute in the bowl to cool before eating. This basic recipe can be modified by what you have on hand. I avoid asparagus and broccoli as they darken the water and make it go bad too quickly. Ill share a good cream based broccoli recipe once Im at the farm where my recipe box is. Sometimes I use this basic recipe and eliminate the chili powder and use a pinch of cloves instead. Cloves take the acid taste away from tomatoes and I add a bay leaf. It is very yummy too. Enjoy
