My day began yesterday with processing 150 chickens. I helped gut them. Thank goodness we were outside. I found out that commercial chickens are processed inside a building, and still done by hand. 1000s of them. I cannot imagine the stench. Cody, the farm owner, shared with us the commercial process. At the end those commercial birds are soaked in bleach. Not his birds! Completely organic outside birds. He rejoices that they are processed in the fresh, outdoor air.
