Need a cold weather meal idea? Bacon Beef Butternut Squash with roasted broccoli. Squash: Preheat oven to 350 degrees. Cut butternut squash in half and scrape out the seeds. Place face down in a pyrex dish with 1/2 hot water and cook 45 minutes. While its in the oven, cook 6 pieces of bacon in pan until crispy, set aside and leave bacon fat in pan. Add 2 sliced onions and 2 stalks of celery, diced to pan. Saute for 5 minutes. Add 1 1/2 lbs ground beef and brown. Once brown, stir in salt/pepper to taste and 1 tbsp cinnamon. Mix together for 2-3 minutes. Remove from heat and place in a bowl. Remove squash from oven, when you can handle it scrape out some of the guts, leaving 1/4-1/2 of squash. Add squash to bowl with meat mixture. Crumble your bacon and add to the bowl as well. Mix and then stuff your squashes with the beef mixture. Place back into 350 degree oven for 25 minutes. Roasted broccoli: drizzle broccoli stems with olive oil, salt, pepper and garlic powder. Bake for 20-25 minutes at 350 degrees. ENJOY!
