Nothing more Murican than making spicy solyanka on the 4th of July. The Ukrainian isnt feeling well, and this is her comfort food. Its spicy, sour, and will keep you feeling warm. Save this for yourself and make it during the winter months. Ingredients... 2 pounds of meat - anything from spam, to smoked sausage, venison, stew beef, chicken quarters, whatever. Sliced thin or dice into small pieces. 8oz can of tomato sauce 1 medium red onion, diced 1 tablespoon tomato paste 1 tablespoon paprika 2 carrots, diced. 1 medium parsley root, cubed small 3 small pickled dill cucumbers, diced. Get the brand name ones, you want em to be crunchy. 1 tablespoon tomato paste 14oz can stewed tomatoes with jalapenos or green chilis 5-8 small, white mushrooms, diced with stems removed. 10 pitted green olives, the type stuffed with garlic, sliced 1 tablespoon capers, loosely chopped. V8 juice, spicy Directions... In a medium sized pot, over low heat add the onions for 4-5 minutes. After theyre soft add the pickles and tomato paste, stir frequently for 4-5 minutes. Add your choice of meat(s) for another 5-10 minutes, until heated through. If using raw meats, obviously adjust the heat and cook until its safe to freaking eat. Transfer onion/pickle/meat to slow cooker. Add all of the ingredients sans mushrooms, olives/garlic, paprika, and capers. Add Spicy V8 just to top off the stew line. Stir. Place on high setting for 3 to 3-1/2 hours, stirring every 30 minutes adding V8 (or water) as needed. Next add the mushrooms, capers, olives/garlic, and a tablespoon of paprika. Stir. Continue on high setting in crockpot for additional 60 minutes, stirring every 30 minutes or so. Scoop into bowels. Add salt, pepper, sour cream, and/or lemon for garnish/taste. Goes great with some melba toast and light, hoppy beer. Will post pictures later...its already in the slow cooker...
