OK, NC pulled pork project, part deux: just made this sauce, very much what I remember about Carolinas BBQ. If youve never had the real thing, there is no such thing as BBQ sauce. Every state down there has a different tradition, and many states have quite a few regional ones beyond that. Alabama BBQ is not NC BBQ by any means. It doesnt start to get to be the tomato paste stuff were used to here until Texas (maybe Memphis too). Try this, just tasted it and it is OUTSTANDING. Its mustard, apple cider vinegar, lots of sugar and brown sugar, smoke extract, pepper and chili powder. Just fantastic. Last nights pulled pork recipe couldnt have been easier and it was pretty good. Ill do more research for the next one, because the heat level is way too high, and I had to adjust the flavor profile this morning by adding more vinegar and honey.
