OUR FRESH FISH CHEF IS EXCITED... Ive rarely heard him so excited, but the excitement was there in his voice, clear as day, as he explained that todays fish delivery is kind of a big deal... Tell me more Dane..., I said, ...if youre excited, Im excited! I said. Its a big day for fresh fish, as well as a fresh catch of Ling, Hake, Jon Dori, Tarakihi and Pink Snapper from NZ, Ive also managed to source some Blue Fin Tuna from South Australia... He said. Ok, sounds good, but tell me more about the Blue Fin Tuna... whys that such a big deal? I said. Its just a beautiful cooking fish - it has a slightly higher fat content, so it has a moist texture and smoother taste after cooking than other kinds of tuna. Its a prized fish in Japan and makes excellent sashimi. Im filleting them myself and theyre just an awesome fish, you have to try some! He said. OK, put some aside for me please chef! I said! And that was good enough for me - if the fish chef is excited, thats a pretty good indication that theres some amazing fish to be had at the farmers market... will I see you there!? :o)
