Ok , so its true.. I am a foodie and I had these polenta towers in Calistoga... Had to come home to recreate them in my kitchen ... So darn outrageously tasty are they... I used a bruschetta sauce from Trader Joe with filling of potatoes, dried tomato, carrot, portobello mushroom , red and orange bell, onion and fire roasted green chile. Garlic salt and white pepper to taste. Polenta rounds top and bottom in an oiled muffin pan . Baked and broiled to crispy deliciousness. I think I must be genius ... Thank god!
