Okay, Hutch pals. I have to say that Dana Hoefer Fellows and her sister, Cathy Bigger, are the stars of the evening. Numerous times on the Hutch page and on the Really Good Food recipe share page, someone has brought up the corn fritters from the Red Rooster and asked if anyone has the recipe. Well now, thanks to Dana and Cathy, we do! If you make these, please report back and let us know if they match up to the memory. Corn Fritters - Fry at 350 degrees (this is a half recipe; can be doubled) 1 can cream style corn 2 small eggs 2 cups flour 2 tablespoons baking powder 2 teaspoons salt 1/3 cup sugar 1 pan Kelloggs Corn Flakes, crushed Mix first six ingredients, it will be sticky. Shape into balls and roll in crushed corn flakes. Fry until golden brown. We make these lots. I actually just add crushed Corn Flakes with other ingredients and drop by tablespoon into skillet of hot oil, turning or rolling over till golden all over. I dont crush flakes into crumbs, just smash so not whole. i serve with honey. I like to mix up day ahead or early in day and refrigerate until ready to fry. Seems to make batter stiffer and fry more even. (Note from Cathy: This is moms recipe and it is also the recipe from my old neighbor who was the cook at RR forever.)
