One of my sweet friends just asked me to send her my enchilada recipe...thought I would share in case anyone else wanted to try it. - Chicken breast or tenders (not breaded of course) - Green Enchilada Sauce (Rosarita or La Victoria - Shredded Cheese (I use cheddar but Monterey Jack, Mozzerella, Mexican mix... its all good) - Flour Tortillas (corn is good too) I cook the chicken and shred it up. I season it with salt, pepper and garlic salt. Then I take the green enchilada sauce and mix it up in my shredded up chicken for awesome flavor and it stays really moist. Then I put sauce in the bottom of the pan...take each individual tortilla and coat it with sauce before adding the chicken and some cheese. Then I roll them up. Place in dish...add some more sauce on top...coat with cheese and place in oven on like 250° for about 30 minutes. I keep it low because I dont like to use foil. It usually ends up sticking to the cheese and makes my pretty enchiladas ugly! I like to top with sliced avocado.
