Opt out of a diner brunch or fast-food for these delish Breakfast Egg Muffins for the family! Ingredients: - Eggs (as many as you want/need) - Coconut oil or PAM - Salt & Pepper to taste - Handful of Veggies (Chefs choice) - Turkey bacon or sausage, cooked. Optional: - Cheese! - Egg whites instead of whole eggs. 1.) Preheat oven to 350 F and grease your cupcake pan with your oil. 2.) Combine your eggs in a bowl, finely chop your veggies and meat. Add some salt & pepper if youd like until eggs are scrambled. 3.) If you are using cheese, sprinkle some on the bottoms of the cupcake places. Evenly pour mixture into cupcake spaces about 2/3 of the way. 4.) Bake for 18-20 minutes, remove from oven and allow to cool for about 10 minutes before removing from the pan. Six eggs and ingredients made about eight muffins. Coachs Tip: Another great thing about these little guys is that you can store them in plastic baggies in the fridge for later meals. When youre ready to eat, pop in the microwave for about 30 seconds and theyre ready to go! Make a tin-full for the week & youre all set!!
