Our greek street food dinner, mum and dad and toddler friendly. Super tasty, really easy, and also nice and healthy!! Chicken souvlaki with tzatziki, lemon pilaf rice and greek salad served with pita bread. Also kids tend to love anything on a stick!! I dont know why but if its on a skewer its a novelty. For the chicken- I have just used chicken breast but you could definitely use thigh meat if you prefer and i have just marinated it in - Garlic Lemon juice Olive oil Dried oregano I have also added vegetables into my chicken skewers which is optional of course and interchangeable depending on what you prefer, i have used- Zucchini Red capsicum Onion skewer your chicken onto soaked bamboo skewers (water soaked to prevent splintering ) Alternating with veg if desired. For the kids i cut the sharp end off the skewer after i have skewered their meat. Cook in a frying pan or on the bbq until cooked through. Lemon pilaf 1 1/2 cups of jasmine rice washed 3 cups of chicken stock Zest of 1 lemon and juice 1 bay leaf Salt and pepper A lump of butter as you like ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Sweat onion off in a pot (oven safe pot) until tender, add washed rice and stir for a few seconds, add lemon components and stock and bay leaf, once it is simmering take off the heat and add salt and pepper and your butter, cover the pot tightly in foil and place in a moderate oven at about 150 degrees for around 20 mins. Tzatziki 1/3 of a cucumber grated (salted and squeezed) 2 cups of greek yoghurt Juice of half a lemon Fresh mint shredded Half a clove of crushed garlic Salt and pepper ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Salt the cucumber slightly and sit for about 15 mins then squeeze the excess moisture out and mix with all other ingredients. Greek salad You can make this as desired, i use cucumber, tomato, capsicum, red onion, cos lettuce, fetta and kalamata olives and i just dress with olive oil and lemon juice. I serve this all in separate dishes as a help yourself kind of dinner, great for friends and family as everything is very simple. Serve with your pita bread and fresh lemon to squeeze.
