PEACH CRUMB BARS Dough: 3 c. flour 1/2 c. Stevia, granulated 1 tsp. baking powder 1/4 tsp.salt 1 cup butter, cold & diced 1 egg, slightly beaten Filling: 5 c. diced or sliced peaches 2 Tbsp. lemon juice 1/3 c. flour 1/2 c. Stevia, granulated 1 tsp. pumpkin pie spice Preheat oven 375°. Put a nice coating of cooking spray on sides and bottom of 9x13 pan. To make dough: Put flour, Stevia, baking powder and salt in a bowl. Mix well with a wire whisk. Once blended, add beaten egg and diced cold butter. Using a pastry blender, swiftly cut the butter into the dry mix. You should get a crumbly look dough when completely blended well. Take half of this crumbly mixture and place into bottom of prepared pan. With the back of spatula or palm of hand, pat it down evenly. This will become the bottom crust for the bars. Place the pan and the bowl with the remaining 1/2 crumbly mixture into refrigerator to keep cold while you prepare the filling. To make filling: Take peaches and put into a bowl. Add the lemon juice and stir to coat peaches well. Sprinkle sugar and pumpkin spice and stir to blend. Carefully add the flour in small incriments, stirring after each add-in, until blended all together. Remove pan and bowl from refrigerator. Pour peach mixture on top of the pressed crust. Spread around evenly. Using your hand, sprinkle the remaining dry crumble mixture over the top of your peach filling. Be sure to scatter it as evenly as possible. Place into oven and bake 45-50 minutes or until top is just starting to brown. Allow to cool completely before cutting into bars.
