Pea Porridge: 1 Bag dried peas, rinse REALLY well, soak for a couple hours 1/2 onion, diced 1/4 or less diced cooked ham, reserve juice (or just get a ham hock, the bone is AMAZING) 1/4 carrot (average sized) diced 1 Bay Leaf 1 tsp Thyme TON OF GARLIC Salt and Pepper (to taste) Pinch of Cayenne Set peas to simmer with water, about 3 times the amount of peas. Saute onion and carrot in butter. Toss all the stuff in with the peas and simmer till the onion, carrot and peas have broken down smooth. If you used the bone in, pull that out. Pull out the bay leaf. Serve up with cornbread. Simmer that mess till the spoon stands upright, adding water when needed while simmering. EASY and NOM. Freezes beautifully.
