Pea and Ham Soup (Slow Cooker) Serves 6 Ingredients: 500g green split peas 1 tablespoon olive oil 3 cloves garlic, crushed 1 ham hock 2 medium carrots, chopped finely 2 stalks celery, trimmed, chopped finely 4 fresh thyme sprigs 2 bay leaves 2 litres water Rinse peas under cold water until the water runs clear, then drain. Heat the oil in a large frying pan, cook garlic, stirring for a few minutes. Place garlic into a 4.5 litre slow cooker, stir in peas and remaining ingredients. Cook, covered, on low for 8 hours. Remove ham from the cooker. When cool enough to handle, remove the meat from the bone, shred coarsely and return the meat to the slow cooker. Discard the skin, fat and bone. Season soup to taste and serve.
