People uninterested in cooking/food related topics go now before your eyes glaze over. Ill give you to 3. 1...2... Ok, I just have to tell you guys that I made carrot fries and they were amazing! I’m not a fan of cooked carrots but I am a big fan of fries. On the other hand, I’d like to live another year or two so I’ve been looking for healthy alternatives. Turns out when carrot meets olive oil and spices and a really hot oven, it’s pretty wonderful. Spice them up with a heavy hand. They can take a lot. Super easy. Even non cooks can handle this. Preheat to 400 -Cut about a lb of carrots to carrot stick/French fry size. ( I had a bag of organic carrots in different colors) Make them all about the same size or they cook at different speeds and you end up having to pick the small ones out with tongs to keep them from burning. -Toss cut carrots in a big bowl with a couple of tablespoons of olive oil -add *spices, toss and bake on a parchment paper lined baking pan until browned and crispy, about 40-50 mins depending on size. Hint- At 20 they are cooked but it takes time to get crispy. Toss them on the baking sheet at 20 and every 10 minutes after until you have the texture you like. Mine took about 50 minutes *Spices-Anything you like, Cajun or Indian work. I used 1/2 t hot smoked paprika, 1/2 t sweet paprika, 1/2 t sea salt, 1/2 t black pepper, 1/2 t cumin. I ended up sprinkling more salt on during cooking. These would be great with some kind of yogurt dipping sauce. Healthy fries! Yum.
