In the harsh climate and thin soil of the worlds tropical regions, starchy, sustaining foods such as potatoes and grains often grow poorly. The staple crop in these regions is manioc, or cassava, a plant producing edible green leaves and large, starch-rich tubers. Some varieties contain lethal amounts of cyanide that must be cooked out, leaving a dry and nutritious flour. When that flour is further processed into a pure starch, the result is tapioca. Tapioca contains manganese, calcium, magnesium, phosphorus, zinc, copper and selenium. Its also high in fibre which can help lower the risk of colon cancer, diabetes and heart disease. Its high in iron which is crucial for the proper growth of the human body to maintain great health. Our body needs iron to produce red blood cells. The main function of iron is to help carry oxygen from the lungs to the muscles and other organs. Tapioca also contains Folic Acids which are a member of the B vitamin family. It protects cell damage so it has an important role in the prevention of many cancers. Folic acid is necessary for the development of our cells and the brain. - Katie B
