#Poha, Hindi for flattened, or “beaten,” rice (Marathi: pohe), is the original “instant” rice breakfast cereal enjoyed throughout India. We use the thin variety. Once moistened, it can be lightly fried or steamed with nuts, spices, potatoes (or peas) for breakfast. It’s the perfect quick Sunday breakfast. There are numerous variations: kanda poha is fried with diced onion. The sweetness of the onion in oil reduces the need for sugar. Or, omit the onion and add toasted coconut and fried cashews for sweetness (see photo). For a heartier dish, double the amount of potatoes; to lighten it, omit the potatoes completely.
