Pork & Squash Stew - dilemma. Butternut or Acorn? Shake about 2 lbs cubed pork, butt, shoulder, boneless western rib (I use,), etc. In 1/2 cup flour with 1 tsp seasalt, 1 tsp grd coriander, and 2 tsp paprika (I use smoked), grinds of black pepper. Brown in 2tbl bacon fat, olive oil, and butter...ea. Add 1 1/2 to two chopped onions and cook down a bit. Add rest of seasoned dusting flour, cook down a bit. Xfer to a bigger pan, dutch oven, crockpot, etc if your orig pan is too small. Add 1 15oz can stewed tomatoes squished, 1 qt chicken broth, 1 big bay leaves, 2 tbl Apple cider vinegar. Cover, simmer 2 hrs, or 4 to 6 in a crock pot till tender. Peel, clean, 1cube any winter squash, add. Add 1 to 2 white potatoes and 1 to two sweet potatoes cubed. Add 1 to 2 cups lima beans...frozen or canned. Simmer another 1/2 to one hour till tender. The island recipe uses corn instead of potatoes but is too close to a Brunswick style taste, and the sweet potatoes enhance the pork . De
