Protein powders are a mainstay for me, but I can only drink so many shakes. So I often use the powders (vegan or whey-based) as a batter--and have been able to replicate many pastries (savory and sweet), from pancakes to muffins to flatbreads/tortillas. The basic recipe is one scoop of protein (I used dutch chocolate whey protein isolate below), and enough water to make a batter (thickness varies per intended use). My four crepes below came to 120 cal--2g carb (all fiber), 0.5g fat and 25g protein. While the recipes can be as minimalist or decadent as desired, subbing protein powder for refined/carb-based flour is a great way to have your cake and eat it, too. :)
