Quick chicken biryani Boneless chicken(pieces)-600gms Basmati rice(boiled)-1 1/2 cups Oil-3tbsp+ Onions sliced-2 medium Onions sliced and fried brown-3medium Cinnamon stick -1 inch Bay leaves or tejpata-2 Red dry chilli-1 Cloves-6 Cumin seeds-1tsp Tomatoes-2medium ( blended) Green cardamons-4 Green chillies(slit)-3 Turmeric-1tsp Salt-to taste Ginger-garlic paste-1 1/2tbsps Red chilli powder-1/2tsp Thick yogurt-1 cup Garam masala powder-1/2tsp Ginger( cut into thin strips) -1 inch piece Fresh mint leaves (torn) Coriander leaves (torn) Milk-1/2 cup Rose water -a few drops Eggs (boiled &sliced )-4 Some ( cumin seeds, cloves, black peepers, dalchinni) roast them in pan and then crushed them use it fresh. 1)heat oil, add cinnamon , bay leaves , cloves, cumin seeds, green cardamons and sauté. 2)add sliced onions and sauté.add slit green chillies and chicken cubes and continue to sauté. Add turmeric powder and mix. 3)add tomatoes and salt and mix . Add ginger-garlic paste, red chilli powder and yogurt. Mix well.Add half the fried brown onions. 4)add the boiled rice on top.Sprinkle garam masala powder, ginger julienne, mint leaves and coriander leaves. 5)sprinkle milk,rose water and remaining browned onions. Cover and cook on low heat for about 10 to 15 min. 6) garnish with egg slices and serve hot.
