RECIPE Spicy potato wedges. 1 kg potatoes, cut into wedges, placed in a bowl of 1/4 cup olive oil 1 level Tbsp paprika 1 level Tbsp ground cumin 1 level Tbsp ground coriander 1 scant tsp chilli powder 1 Tbsp sea salt - flakes or crystals for crunch, not table. Mix oil and spices in a large bowl. Tip in potato wedges. Coat. Tip out onto baking parchment, separate out. Sprinkle salt flakes over. Bake 200° - 210°C for 45 mins approx. I start with 210 to get them crispy, then reduce to 200. I also par-boil first before adding to the oil mix. Serve with sour cream and sweet chilli sauce :-) Made these tonight with homemade burgers with pomegranate molasses and bacon and homemade soft burger rolls. If anyone wants the recipe, I can post it tomorrow. Kids love them.
