Rainbow Salad/Stuffed Tomatoes. It is so refreshing and extremely nutritious! Enjoy! Kale, Cucumber, Tomatoes, Parsley, Cilantro, Goji Berries (may use cranberries), Red onion, Bell-pepper, Help Seeds, Chia Seeds. Chop all the ingredients, except Hemp Seeds, Chia seeds and Goji Berries. I used food processor, just few spins for each ingredient. Dressing: Flax Seed Oil (may use Olive Oil), Coconut Vinegar (can use Apple Cider Vinegar. I use Coconut Vinegar, because it is smoother), Honey, Lemon Juice, Himalayan Salt, Black Pepper. For the fancier presentation (for a party or so), I scoop out tomatoes and stuff salad inside.
