Really looks great. Thanks, Tricia Johnson. Sautée one diced large sweet onion, 4 diced cloves garlic, and 2 fresh ginger peeled and grated in 2 Tablespoons of olive oil for 5 mins. Over medium heat. Add 1 and 1/2 lbs carrots, peeled and sliced 1/2 thick; 3/4 cup RAW cashews, kosher salt to taste, 1 t tsp each curry and turmeric, and 6 cups veg broth. Bring to a boil, reduce heat to low, and simmer about 30-45 mins until carrots and cashews are very tender. Process in batches in a sturdy blender.
