Recipe of the Month- shared by your neighbor, Brynn Lemieux Cheesecake Santa Hat Bites Ingredients * 18 Oreos crushed * 2 ½ Tbsp butter, melted * 2 (8oz) packages cream cheese, softened * 1/4 cup + 2 Tbsp granulated sugar * 2 large eggs * 1/2 tsp vanilla extract * 1 1/3 cups white chocolate chips * 1/2 cup + 1/3 cup heavy cream, divided * 2 Tbsp powdered sugar * 25 small, fresh strawberries *Preheat oven to 325 degrees. In a mixing bowl, blend together crushed oreos and 2 Tbsp melted butter. Press mixture firmly into the bottom of the foil lined and brushed with butter 8x8 baking dish, set aside. Allow foil to hang over edges for easy removal in later steps. *Using electric hand mixer, blend cream cheese and granulated sugar until smooth. Add eggs and vanilla and mix until well blended. In separate microwave bowl, heat white chocolate chips with 1/3 heavy cream until melted and smooth. Pour melted white chocolate mixture into cream cheese mixture and blend together. Then pour mixture over prepared crust in baking dish. *Bake for 40 minutes. Turn off oven and allow cheesecake to rest in oven for 15 minutes. Remove from oven and rest at room temperature for 30 minutes. Cover with plastic wrap and freeze for 3 hours or refrigerate for 6 hours. *Remove from freezer or refrigerator and lift cheesecake out of pan using foil overhang. Cut cheesecake into squares. *In mixing bowl, whip ½ cup heavy cream until soft peaks form, then add powdered sugar and mix until stiff peaks form. *To assemble: cut a flat top off each strawberry and lay flat side on top of cheesecake. With sweetened whipped cream, pipe around strawberry then finish with a small amount of the top of the “hat”. Store in refrigerator in an airtight container. Enjoy!
