Recipe of the day: Chicken Fried Steak Ingredients- 4 pieces cubed steak 2 tsp garlic salt 1 tsp black pepper 1 cup all-purpose flour 2 eggs, lightly beaten 1/4 cup vegetable or canola oil Directions- Pound the meat with a meat mallet on both sides for 30 seconds. Sprinkle each piece evenly with the salt and pepper. Place the flour in a shallow dish such as a pie pan and the eggs in a separate shallow dish. Dredge the meat on both sides in the four and place on a large baking sheet. Beginning with the first piece done, dredge the meat again in the flour, then in the egg, and then in the flour again. Return the meat to the baking sheet to sit for 10 minutes before cooking. Preheat the oven to 250F. Place the oil in a large cast iron skillet over medium-high heat. When hot, add the meat in batches, being careful no to overcrowd the pan. Cook for 4 minutes on each side. Place on a wire rack over a jellyroll pan, and put in the oven to keep warm while cooking the remaining meat. Serve warm. ENJOY!
