Remember, Spelt Rights founder, Beth George, began focusing on the connection between diet and behavior, during the decade that she served as a child advocate attorney working with children who were incarcerated, in state custody, and in the special education system. She observed that children and adolescents who did not have consistently healthy diets were more inclined to have behavioral problems that often led to problems in school, and even worse problems that landed them in the juvenile justice system. Spelt Right was born out of the concept that good food (good in the sense of nutrition and taste) could help improve the lives of children and lead them toward successful and productive futures.
