Roasted Smashed Potatoes 12-16 red potatoes 1/4 cup of olive oil 1/4 cup finely shredded Parmesan cheese 2 tablespoons parsley Bring potatoes to boil in large saucepan, reduce heat, cover and let simmer for 20-30 minutes (until tender). Preheat oven to 450. Placed tender potatoes on foil lined baking pan, cool for 10 minutes. Once cooled, press on each potato until about 1/2 in thickness (keeping potato in one piece). Brush olive oil on potatoes along with salt and pepper. Bake uncovered for 10-15 minutes. Turn potatoes and repeat. Sprinkle on cheese and parsley and bake until cheese melts. Ready to serve!!!
