Saturday I did a demonstration at the For Women Only Expo so as promised here are the recipes that I shared there. I demonstrated a three coarse romantic dinner for two. First coarse was Caprese Greens salad paired with a glass of Chateau St. Michelle Riesling, Entree was a Lasagna Roll paired with a glass of 337 Cabernet Sauvignon, and for dessert I mad a Tiramasu paired with a glass of Freixenet Cordon Negro. Enjoy! ~Chef Heidi May Caprese Greens Salad Cherry Tomatoes Fresh Mozzarella Slices of red onion Spring Mix Lettuce Balsamic Vinaigrette 1/4 cup balsamic vinegar 2 teaspoons dark brown sugar, optional* 1 tablespoon chopped garlic 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 3/4 cup olive oil 1.) Whisk together Vinegar, brown sugar, chopped garlic, salt and pepper. 2.) Slowly whisk in the olive oil. 3.) Toss all salad ingrediants with desired amount of dressing Lasagna Roll ups 1 # Ground Beef Salt and Pepper 1 tsp Chopped Garlic 1 egg 15 oz Ricotta 2 cups Italian Cheese Blend (I use a mixture of Mozzarella and Parmesan) 1/2 tsp Oregano 1/2 tsp Basil 10 Lasagna noodles 24 oz Marinara Sauce 1.) Pre heat oven to 350 degrees. Place 1/4 of you marinara sauce in the bottom of a 9 x 13 pan and spread out evenly. 2.) Brown the ground beef. About half way through the cooking process add chopped garlic, salt, and pepper. 3.) Cook your lasagna noodles until they are al dente. 4.) Mix Ricotta, 1 1/2 cups of shredded cheese, egg, basil, and oregano together. 5.) Spread ricotta mixture on the noodles in an even layer and then sprinkle the ground beef on top of the cheese. Roll the lasagna noodle up and place in the pan. 6.) Ladle the remaining sauce over the middle section of the noodles and sprinkle with the remaining cheese. Over with aluminum foil and place in the oven. 7.) Bake for 25 minutes covered and then take off foil and let cook for another 10 minutes. Take out of the oven and enjoy Tiramasu 5 egg yolks 3/4 cup sugar 16 oz Marscapone Cheese 1 Container of Cool whip 1 1/2 oz Disaronno (or another Ammeretto) 1 package Lady Finger Cookies 1 1/2 Coffee Cocoa Powder 1.) Whip egg yolks and sugar until thick and fluffy. 2.) Add in Marscapone, cool whip and Disaronno and whip till think and fluffy. Set aside. 3.) Lay out a layer of Lady fingers on the bottom of your pan. Pour half the coffee over the lady fingers wait for the cookies to soak up the coffee. 4.) Place half of the cream on the lady fingers and spread out evenly. Layer the rest of the lady fingers on top of the cream mixture and then soak with the remaining coffee. 5.) Top with the remaining cream mixture and smooth out. Sprinkle with cocoa powder and refrigerate until ready to serve.
