Saturdays Menu: Breakfast: 1 whole grain English muffin(100 calorie) 1 tbsp peanut butter 1/2 a banana Snack: 1/2 cup plain Greek yogurt 1/2 cup raspberries Lunch: chicken bowl Heat 1 tsp EVOO in skillet over medium heat, sauté 1/2 cup thinly sliced red pepper 1/4 cup corn 1/4 black beans & 2 oz diced chicken for 5 mins. Salt and pepper to taste. Serve over 1/2 cup cooked brown rice 1/4 cup salsa and 2 tbsp shredded light cheddar cheese Snack: 1/2cup cucumber 1/2cup radishes 1 tbsp light ranch Dinner: baked salmon with mustard and herbs Preheat oven to 350 degrees. Coat 6 oz salmon with 1 tsp mustard sprinkle 1 tsp of each chopped parsley,Chives, dill and place in baking dish. Mix 1 cup broccoli and 1 cup cauliflower with 1 tsp EVOO and 3 cloves garlic minced and add along side salmon, cover with foil and bake about 20 mins until salmon is cooked Snack: 2 clementines -Meals By Milly-
