Seasonal Soup to NOURISH your soul and CONNECTIVE TISSUE. ⭐️The star of this soup is winter squash which is a wonderful source of Vitamin C (necessary for collagen synthesis). We boost this soup with gelatin (food form of collagen) which provides the raw materials to feed your tissues. Then we cream it up with a touch of healthy fat from coconut cream or milk. Finally, we enhance the flavor with anti-inflammatory spices. Here are the directions... 1. Start with any winter squash. I used a combo of delicata and red kuri because I had them on hand, but butternut would work just as well. 2. Cut the squash in half lengthwise. Leave the seeds, they are easier to scoop out after cooking. 3. Bake flesh side down on a baking sheet at 350 degrees until fork tender (approx 20-30 minutes). 4. Let squash cool until you can safely handle it without burning your hands. Scoop and discard seeds. 5. Scoop out flesh of squash and place in high powered blender, like a Vitamix. 6. Add 2 Tablespoons of coconut cream or double that amount of coconut milk. 7. Add 2 Tablespoons of grass fed gelatin (cold water soluble) 8. Add 1/2 teaspoon each of turmeric, cumin, cinnamon, and sea salt. Add 2 shakes of pepper. 9. Add 1 cup clean filtered water. 10. Blend up until smooth. You may need to add additional water (1/4 cup at a time) until it becomes a pourable consistency that you like. 11. If you use a Vitamix, you can blend for about 5 minutes and it will heat up hot in the blender. Otherwise, you may need to transfer soup to a saucepan and gently heat as warm as you like. 12. I topped it with a bit of raw sprouted pumpkin seeds for a comforting bowl of seasonal goodness. Enjoy!!
