Several years ago I heard Dr. Oz tell Oprahs audience that you could eat whatever you want... as long as you make it yourself from scratch. Ive always thought that was a great theory, except for one problem. I come from a family of bakers and I have NO problem baking a cake if I want cake. Today, it was scones. Since I had pumpkin left over from yesterdays waffles, I looked for a pumpkin scone recipe. With the help of a certain 4-year-old, the recipe was modified and we came up with our own recipe. It was pretty fantastic. They tasted like a mild gingerbread cookie and my son was oh-so-excited that we got to eat cookies for breakfast. Ingredients: -2 cups almond flour -1/2 cup tapioca flour -2 tablespoons coconut flour -1 teaspoon cinnamon -1 teaspoon baking soda -1 tablespoon maple syrup -1 egg -1/2 cup pumpkin puree -2 tablespoons coconut oil -Blueberries for topping Preheat oven to 350. Mix dry ingredients in a bowl. Mix wet ingredients in a separate bowl. Mix them together to form the dough. Line a cookie sheet with parchment paper and put dough on it, creating a large round, about an inch thick. Decorate it with blueberries and slice it. Bake for 20 minutes (or until starting to brown). Enjoy!
