So - I gotta give myself a little pat on the back. This skillet of dressin?? I wanted some dressin...but we were having HAM (neither Honey nor I are real crazy about turkey). So, I thought, to heck with it, Im gonna make dressin ANYWAY - Ill just saute the veggies in bacon grease and add some bacon in there and give it a smokey flavor to pair well with the ham. BUT! Did I stop there???? OH NO NO NO NO NOOOOOOOO!!! Wednesday, I had to run up to the store for a quick couple of things...and I saw outside the meat department vacuum sealed ham bones for dogs. BING!!!!!!!!!! The light bulb over my head came on!! Too bad they dont make ham broth or stock...Ill JUST HAVE TO MAKE MY OWN!! Nooooo - I didnt buy a ham bone packaged for the dogs. I DID, however, buy a HAM HOCK!! Came home put it in my enamel coated dutch oven, covered it with water, threw in a couple of sticks of celery and a whole onion and a bit of salt and pepper...brought it to a boil and let it simmer all night and half the day until I was ready to use it as the liquid for my dressing (which was buttermilk cornbread mixed with sauteed onions, garlic, jalapenos, celery and bacon). SMOKEY, SAVORY, SOUTHERN GOODNESS!!! I then used the rest of it as liquid for the gravy....HOLY SMOKEY HEAVENLY HEART ATTACK!!!!!!!!!! WOOOOOOOOOOOOOOOOO-WEEEEEEEE!!!!!! Dat was some GOODNESS GRACIOUS right der!!!
