So, in my prep for each week I make a dozen hard boiled eggs--great for any meal or snack. Eggs are one of natures perfect foods--they are a high quality protein, with many essential amino acids needed for body and muscle repair. In addition, eggs contain significant amounts of Vitamin A and B-12; B-12 is one nutrient that our bodies cannot produce, and is involved in the metabolism in almost every cell in our bodies. So important! Surprisingly, I bake mine in the oven... Yes--thats what I said--in the OVEN! Use a muffin pan with one egg each--preheat your oven to 325 (I stay on the low end because my oven runs hot.). Place pan on a rack in the top half of the oven, away from the element. Bake for 25 minutes--remove promptly. Using a spoon, scoop each egg into an ice bath--water and ice together in a large bowl. Cool for 15 minutes. The best thing about this is that the shell COMES RIGHT OFF! I was so glad to find this method--so much less frustrating to peel an egg now =)
